Sitio Corrego da Aldeia is situated on the eastern coast of Brazil in
the Espirito Santo Mountains region which is known for its climbing
altitudes and pockets of small holder coffee producers. The farm is
nestled in the town of Vargem Alta and has been in the Pasti family
for over 80 years, being run by three generations. The name Corrego
da Aldeia refers to the abundance of water in the area and was
named after the streams and lagoons nurturing the trees.

You may remember back in March, I selected a lovely coffee from Fazenda Vila Boa in Brazil and Gareth was slightly disappointed at my choice or origin. However, I managed to sway his opinion and he was left pleasantly surprised at what this coffee had to offer.

So I present to you, Sitio Corrego Da Aldeia. Owned by Joao Pasti and Leonardo De Paula Pasti, this farm is located in the town of Vargem Alta on the eastern coast of Brazil in the Espirito Santo Mountains region, known for its pockets of smallholder coffee producers. The coffee is processed using the Pulped Natural method, where after a careful harvest of the coffee cherries, they are delivered to a wet mill onsite to be floated in a tank to remove any floaters. They are then sent to be de-pulped via a machine to remove the external fruit from the seed. The pulped coffee is dispersed on raised beds inside a greenhouse to dry for 10-15 days. Once drying is complete, the coffee is gathered into bags to rest for 30 days prior to being hulled, sorted and prepared for export.Now to the tasting of this coffee.

My initial thought is this is a smooth well balanced coffee which starts with a light sweet taste you may associate with apple or peach. There are some floral tones which bloom into a rose like flavour and as the coffee begins to cool you are left with a pleasant lingering, sweet candy like aftertaste.
