We start with the raw ingredients: cocoa mass, cocoa butter and sugar, milling them together to make chocolate to our own carefully thought out recipes.
Cocoa Mass
We start with cocoa mass, the pure, unsweetened, ground-up heart of roasted cacao beans. We source ours from Rainforest Alliance certified farms.
Cocoa Butter
Some of our hot chocolates also include additional cocoa butter.
This is sourced from West Africa.
Sugar
And then we add sugar to sweeten it all up.
We use British caster sugar.
The Process
All of the ingredients are then added to our ball mill, which refines the chocolate to a smooth, silky consistency.
Our Chocolate Mill
Our mill contains hundreds of stainless steel ball bearings which ensure a smooth end product.
We add all the ingredients, which are continuously mixed and cycled through the ball mill.
Once ready we cool the chocolate on trays
Granulating
The final stage is to break the chocolate up and pass it multiple times through our granulator.
